Keto… pizza? Yes you read that right!
That’s right! There was no bread involved in the making of this pizza. You’re probably thinking “What?!”, don’t worry, that was me too! But if you’re interested in a low carb pizza? READ ON!
This pizza base is dough free, and made from eggs and cheese… that’s it! You might be sceptical, i was too, but it’s surprisingly good. I even fooled my 12 year old brother with it.
If you’re interested in trying this, here’s what you will need:
(this is for 1 serving, double it for 2 and so on. If serving with a side salad i honestly think this is enough for 2 people but you can be the judge of that)
INGREDIENTS
FOR THE BASE:
2 eggs
3 oz of grated/shredded mozzarella
TOPPINGS:
1-2 tbsp of tomato paste, or pesto if you prefer
½ tsp of dried oregano or mixed herbs (optional)
2 -3 oz grated/shredded mozzarella (or whatever cheese you prefer, also YOU be the judge of how much cheese you use for the toppings, you can never have enough cheese)
Then the fun part, choose whichever toppings you like. I usually use spinach, bacon or ham and onions but you can add whatever you like.
METHOD
1) Preheat your oven to 200℃ / 400℉
2) To make the crust, crack your eggs into a medium sized bowl and add the grated/shredded cheese. Give it a good stir.
3) Spread the egg and cheese batter onto a baking sheet lined with parchment/greaseproof paper. Either form a circle or rectangle it’s up to you!
4) Bake in the oven for 15 minutes until it turns nice and golden. Remove and let it cool for a minute.
5) Spread your tomato paste or pesto onto the crust and sprinkle the oregano/mixed herbs on. Add your cheese and other toppings.
6) Bake for another 5 – 10 minutes / until the pizza is golden brown.
7) And voila, bon appetit.
